Beef and Juniper

Made with lean meat from the Chuck and Round of grass fed beef from Duell Hollow farms. Half of the meat is ground through a large die, half through a medium die giving the sausage a nice bite but smoth texture. Spiced with Juniper and Tellicherry peppercorns. This sausage is dried for four months and is best with casing on.
