Lonzino is made from pork tenderloin, a small muscle running along the backbone of the pig. It is a very lean, tender, and delicate cut. On beef, the tenderloin is where the Filet Mignon steak is cut from.

We cure our Lonzino for one week with salt, sugar, and ground coffee. After curing, we stuff the Lonzino into a pork casing and then dry it for a couple months. When finished, Lonzino is subtle with an added earthiness from the coffee cure.
