'Nduja

'Nduja is a spicy spreadable pork sausage originally from Calabria in Southern Italy.

Our 'Nduja swaps out the traditional Calabrian chile for a blend of New Mexico Red, Ancho, Serrano, and Chiptole chiles. We add this chile mix to finely ground pork and then stuff the sausage into pork casing. The 'Nduja ages for three months. When ready, 'Nduja is still soft and perfect to eat spread on top of toasted sourdough.
