We trim our standing rib roast to be boneless except for the rib. On average each rib is two inches and weights two pounds. Our portioning starts at two rib bones, and incrementally increases per rib bone -up to to six bones. Be aware we do work with animals that vary in size and this affects the final weight and there may be fluctuations of 1/2 pound on either side.
