We trim these beautiful tenderloins free of all sinew and fat before tying. These Roasts average 3-4 lbs. Whole or 2 lbs. Halved. Be aware we do work with animals that vary in size, and this affects the final weight and there may be fluctuations of ½ -1 pound on either side.
